Can You Wear It To a Wedding? Emmeline Textiles Eleanor Pearl

What do you do when one of your closest sorority sisters sends you an invitation to her wedding at a castle in Canada? You RSVP yes! Then you remember you have a toddler. Then you remember he pretty well behaved and you are a babywearing educator, so you can make it work.

So you book all the accommodations, get your passports, and pick an outfit. Then you go look at your carriers and realize one thing: you are a budget wrap person and everything you own is pretty wild patterns. Nothing really suitable for wedding in a castle. Luckily Emmeline Textiles reached out to me and offered to send me one of their wraps.

Now, I am not an overly girly girl, but this wrap was so pretty out of the package I almost didn’t want to touch it. I planned on washing and ironing it first, per the instructions, but that didn’t happen. We went to local rock and mineral museum, and Jack decided he needed an uppy to see everything better.

This was the only carrier in the car so I had to use it.  It did pretty well for being in loom state. Wrapped pretty easily on Michael and he liked the softness.

We did a basic Ruck, he just had enough tail to tie at the waist. He does know to wrap, he just isn’t the best at making a seat so I just do it for him. I should really teach him considering that it’s my job, but eh. The best kind of babywearing is the kind that works safely for your family.

After this I washed, dried and ironed the wrap. It softened up even more and the weave smooshed together nicely. It was ready for some adventure! I had hoped Jack would let me wear him on the ferry ride to Victoria, but nope. He wanted to run around the deck with daddy. This was probably for the best since he prone to motion sickness.

However, towards the end he got cold and jumped in my lap to warm up. He pulled the wrap over us and snuggled under my jacket. It’s nice when your big boy is your baby once and awhile. The wrap was so soft and warm, a lovely end to our sail.

I didn’t get a chance to wear Jack again until the wedding two days later (kid was way too excited, he wanted to run around the city himself). I went early to help the bride, I used to wrap as shawl without Jack. No one had any idea it was baby carrier!

I need to talk about the venue for second. Hatley Castle is amazing. It’s a Tudor Revival style Castle just outside Victoria. It was built as a private residence, but has since become a military college and currently a public university.

The ceremony took place in the garden next to the castle. It was beautiful. I couldn’t imagine a better spot for my friend to get married.

After the ceremony during the cocktail hour, Jack started to get restless. So up he went in another Ruck. I was so happy to be able to (barely) tie at the waist even 6.5 months pregnant.

Jack was bouncing up and down while I getting his plate of food together. Not enough to pop the seat, but enough to squish my bump. However, my shoulders were very comfortable, despite the 26 lbs of toddler.

After dinner was dance time! Jack loves to dance was overwhelmed by the lights, people, and sounds at this point.

IMG_4853During the speeches I had snuck outside and wrapped him a Double Hammock Traditional Sling Carry with a Double Knot. IMG_4866He calmed down and was happy to join me on the dance floor. The seat held perfectly even with all his bouncing.

IMG_4914Then he wanted down and dance for a good hour by himself. But needed a break for some milk, so up he went in my favorite carry, Robin’s Hip Carry with a Ring. It threaded nice through the ring, but it’s so soft it needed a little bit of adjusting to get it lay flat. However, now that I’ve broken it in more, I don’t have this problem as much.

IMG_4918Then we got a tour of the billiards room…and someone wanted to touch everything, so he went back up. I tightened very well this time to keep him from getting free.

After some more dancing and fun, we all ran out of steam. We said our goodbyes and I put him up in a Ruck Tied Tibetan. I needed one last pic before we left. Recognize this spot? Any X-men fans? It’s the spot where Wolverine jumped from when the school was raided! I was a happy little babywearing nerd.

So, can you wear an Emmeline Textiles Eleanor Pearl to a wedding? Yes, it’s perfect. The color is neutral enough to match any color palette. It’s a simple elegance that can match almost any outfit. The key feature of this wrap is texture. It’s a soft marshmallow. Easy to spread and ever so cushy on the shoulders. I would really recommend this for smaller babies that aren’t known wiggly seat poppers. But it does great with reinforcing passes with a wiggle monster as well.

 

 

Can You Hike In It: Oscha Kasumi Orabel

I was very excited to test out this Oscha prototype. It seemed like a great hiking carrier due to the wool/linen blend. I dreamt it would be soft, cushy but very supportive. I also have a love for Japanese culture, especially the art. This wrapped seemed right up my alley.

Before I delve into the wrap or hike, I would like to address the issue of cultural appropriation. Oscha has been accused of cultural appropriation a few times, this pattern is one of them. The design is based on traditional Japanese woodblock carvings. There are several other wraps with the Kasumi pattern in other colors as well.  Some in the babywearing community felt Oscha, a Scottish-based company, had no grounds to use this pattern.

Although I have a deep love Japanese art, I am not Japanese or expert on Japanese culture. I am not going to pretend I really know much about preserving Japanese traditions. I do know that respect very important to the Japanese people, so I wanted to address this issues in my review. So I reached out to a fellow babywearer Maria Frank. She is of Japanese descent and happily embraces her heritage. I asked her how she felt about it personally. She did not feel this specific case was appropriation, and wondered if the people who were upset over this wrap were Japanese. In general, she said most Japanese feel flattered when they see Japanese influence in Western cultures.

“Traditional Japanese Art is dying. Especially wood block prints. There are not too many artists who really understand it. I honestly think that using Japanese influenced designs in good cause such as babywearing is super respectful!” -Maria

I understand that Maria does not speak for all Japanese, but I thought this was a very interesting perspective. It brings up the issues of when do we cross the line between appreciation and appropriation. In fact, this issue was a huge unit in my Media Ethics class in Journalism School. The general consensus is it usually alright take inspiration from other cultures—as long as you give credit where credit is due, consider the media you are using, and think about everyone you could offend (keeping in mind that there are some people you can never please). If you can’t do all these things, then maybe it’s best to not do it. For example, doing a secret photo essay of hidden tribe that believes cameras steal your soul and never give that tribe a dime is SO not okay. Oscha should have at least consulted a Japanese artist to design it (I have not heard this was the case) and some contribution back to Japanese Arts would have been the best course of action. Any time you borrow from another culture, you need to tread carefully. It’s wonderful to share ideas and create new customs, but it’s a whole other thing is steal something and claim it as your own. There have been far worse examples of cultural appropriation in babywearing recently though. As babywearing becomes more mainstream in North America, issues like this will continue to come up. I just hope in the future manufacturers will stay on the cultural appreciation side.

The colors are stunning in person. It was just as soft and buttery as I hoped when I pulled it out of the box. The day it arrived we had to pick-up my aunt from the airport, which can be overwhelming for a toddler. So, up Jack went into a Ruck. It made a nice deep seat, even with a bouncing toddler yelling “Auntie!” in my ear.

I had planned on taking the wrap for a walk through the Portland Japanese Garden (and possibly ask someone else for their opinion on the appropriation issue), but Oregon spring weather failed me. It wasn’t just a typical dreary day—it was POURING rain and only 38 degrees at 10 AM. Instead, it went on a trek to a park.

We started out from the house in a Robin’s Hip Carry with a Ring Finish, one of my favorite carries. I really wanted to see how it wrap would thread and stay in a ring. A few other wool blends I tried took some work to a ring into place. But not this wrap, slid straight down like a dream.

It stayed in place while I tightened the carry. It spread like butter across my shoulder and stayed comfy for a 25 minute walk around the park. Jack didn’t want to get down, even when he saw this favorite rocking pile (this kid loves to climb rocks).

IMG_2526On the way home, I did a Double Hammock with Freshwater Finish. The tails pulled through the torso pass easily and gripped nicely to keep the carry tight. Sadly no sleepy dust on the walk home, but I was so comfortable that I didn’t mind.

Can you hike in a Oscha Kasumi Orabel? Yes, an enthusiastic yes! I was sad I needed to send this one on it’s way, I have no doubt it would be excellent on a big, long hike. The key feature this wrap is thread blend. The extrafine wool makes it supple, perfect for shoulder comfort without being itchy or thick. The linen keeps the wrap on the lighter/cooler side, perfect for a wide variety of conditions. The cotton give it the structure and support to last on long hikes. Oscha really picked the perfect blend ratio for a versatile hiking wrap for the Pacific Northwest. In fact, I am going to give this my first ever Favorite Hiking Carrier badge!

Can You Hike In It? Kokadi Arielle Eclipse 

I’ve always been a big fan of Kokadi designs. Unique patterns, colors, and themes. My DISO was their Kurma and I cried when it arrived in the mail. That being said, they tend to be too soft for my taste. I like more grip to a wrap. I’ve also heard they are really prone to snags. So I tend to shy away from them.

However, the Arielle Eclipse is a totally different story. As soon as I pulled it out of the package, I was impressed with the thickness. Soft, but thicker than the average Kokadi. And the pattern did not disappoint. A modern scale/shell pattern. I was excited to test it out, but when it arrived I was still dealing with Hyperemesis, so it sadly sat around for awhile before I was well enough to try it.

First I used it for a wrap nap at a Babywearing International of Portland playdate. Jack fell asleep as soon as I got the Ruck with a Ring Finish tied. Clearly someone loaded it with sleepy dust! It threaded nicely through the ring, and didn’t slid around.

 It also went to the park across the street from us one day. I can honestly say it was the easiest to tie and most supportive Robin’s Hip Carry ever. I didn’t even need to spread the shoulder out to make it more comfortable.

 Then one day I felt great and the weather was pretty nice, so we headed out for a family hike. We picked the Rock Creek Trail, easy but some interesting stuff to look at along the way.

Trail Conditions: Some debris on trail from a recent storm, muddy, but overall well-kept. A bit crowded as it a popular trail.

 We started out trying to get Jack to ride his bike, but he thought the umbrella was more fun. The trails are so wide and even, it was easy for him to walk so distracted.

 There is a bird sanctuary in the middle, which Jack loved. We saw a hawk, stellar jay, and two woodpeckers.

 A quarter of the way in Jack decided he wanted an uppy. I started with Jordan’s Back Carry, but Jack some how popped one of the passes down. It wasn’t until I took a photo did I notice.

 It wasn’t uncomfortable at all, no digging or straining my back. But it bugged me to not have it right.

So I switched to a Ruck Tied Tibetan. And took a picture while we continued walking to make sure the seat was right!

 

Very comfortable still and wonderful grip. The seat held well while I was bouncing Jack to sleep on the way back.

Since he was asleep, we decided to walk to the shopping center down the road for lunch. It stayed very comfortable the whole 30 minute walk. Plus I felt so pretty, the pattern and colors are perfect for an suburban/urban setting. It was nice to feel pretty after several weeks of feeling like crap.

After lunch and a little shopping, Michael wore Jack back to the car. We started in a Ruck Tied Tibetan (Michael ties up his tails regardless of a knotless finish), but the top rail was a bit loose and I could foresee Jack popping the seat quickly.

 So we switched to a Wiggleproof Carry Tied Tibetan instead. Jack couldn’t pop it, even when he started to bounce saying daddy was a horsey.  This is when I fell in love with the grip of this wrap.

I asked Michael how he liked the wrap, he said “Fine. I like the colors a lot.” I asked if it felt comfortable, was it digging anywhere? He said nope. If he didn’t like it, he would have simply said “I don’t like it”. Seriously, man of few words.

 The key feature of this wrap is the texture. It’s soft like your standard Kokadi, but thick enough to support a giant sleeping toddler comfortably. I really credit this to the bamboo. In general bamboo is amazing in almost any wrap, but it really makes a difference with Kokadi’s design.

So, can you hike in a Kokadi Arielle Eclipse? Yes. I would really recommend this wrap for almost any hike and almost any age of child. It’s soft enough for a snuggly newborn nap, but supportive enough for a longer hike to a waterfall with a toddler.

Water Babywearing

You know the one drawback to being an experienced mom? You get to facepalm yourself when you find a new product that could have made your life easier from the start. Babywearing allowed me to eat, go to the bathroom, and clean up around the house while keeping Jack happy. But I always had to wait until he was either asleep (and do the paranoid mom checking the monitor every 30 seconds) or wait until Michael got home. And sometimes things got so busy I forgot to shower (more like I fell asleep before I could even think of it), that it could be days before I got the chance.  Jack loved baths with me, but sometimes you need a good standing scrub to feel clean. Sometimes Michael would hold him in the shower, but it’s hard to shower and hold a baby (they get heavy after awhile!).

A few months later I bought a water ring sling to use at my sister-in-law’s house. It got the job done but was not comfy at all. I used in the shower when I needed to (like when I remembered it’s been 3 days since I had a good shower), but never really loved it. It made Jack happy, so I decided to hold on to it. But I knew I was not going to use it with another baby. It would be back to dreaming of showers.

Then Lorene from Frogmama let me test out Wrapsody WrapDuo and everything changed. The night it arrived, Jack and I took tested it in the shower. It was a hit!

We tried a Front Wrap Cross Carry, one of Jack’s favorite carries. He was so happy! All secure and tight—I could never get that stupid ring sling tight so he was never this secure before. It was easy to nurse in to (because toddler logic says a shower is a great time to nurse….).

A few days later I let Michael try it out at the local splash pad. Jack was grump and didn’t want to get wet. But Michael liked the wrap a lot.  He liked that I could pre-tie it on him, pop Jack in and out as needed. He said it would have been nice to have used when Jack was a newborn in the shower (that’s when I facepalmed myself).

Then we tried it out at the pool and it was another big hit! Sadly, I forgot to check the open swim times and we only got to swim for a half an hour. But it was a savior in the showers afterward. Jack was furious we got out of the pool so early. I kept him in the wrap and rinsed us off quick and ran to the car with no fuss. It was very comfortable in a wet Robin’s Hip Carry while we got the chance though.

Lastly, we had a playdate with Myste, another Brand Ambassador, at a pool with a splash pad. It was a little chilly when we arrived but Jack wanted to check out the splash pad still. He stayed warm enough in the wrap close so my body that he was happy to play. Later we went into the pool, and Jack was still just as happy. This time we did a Front Cross Carry so I could pop him in and out as needed. And it was once again a life saver in the showers. Jack was upset playtime was over, but we got right into a warm shower and he calmed down.

Here are my final thoughts on the WrapDuo…

Cons:

  • The wrap is only suitable for front and hip carries since it is a stretchy wrap. This is a good thing because it not safe to have your baby in water and not be able to see them their head level in the water. Since this is a wet/dry wrap, it kind sucks you can’t use dry on the back. It would have been a lot easier to carry my bag and the wet towels to the car after the pool with him on my back.
  • It’s not toddler worthy out the water. The dry weight limit is 20 pounds, which means Jack at 22 pounds was technically too heavy. So when I was wrapping him before the we got in the shower first time, it was really hard to get him tight enough without popping his heat. And Michael said he felt like Jack could have just leaned back and fell out when he was walking to splash pad. I am sure this would not been an issue at all with a baby under the weight limit.
  • They take a while to dry. You know how your swimsuit can still be wet after hanging in the shower hours later? The wrap is made of similar material, so it also can be awhile before it it totally dry. Not a big deal, but it is more wet thing you have to shove back into your bag.

Pros:

  • It is easy to put on and take off. It’s light weight, glides nicely when tightening, but still makes a nice secure knot. No complicated rings to thread or buckles to snap. As long as you know the basics of wrapping, than you are set! And when Jack wanted out to play on the steps of the pool, I just pulled him right out with no fuss. Plus you can do all your favorite front and hip carries, so it is very versatile.
  • It is toddler worthy in the water. The wet weight limit is 30 pounds, which covers most kids well into toddlerhood. I never had issues tightening and securing Jack when the wrap was wet. It felt like any other good quality wrap. It did not dig or hurt in any way either.
  • Easy to store. It is very light weight and folds up small even when wet. It didn’t hog up space in the diaper bag or feel like I was carrying any extra weight.  Nothing is worse than your diaper bag weighing more than your baby.

Overall, the WrapDuo is a great wrap. Like I said, I am facepalming myself for not knowing about it when Jack was still a clingy baby who never me set him down. I could have at least been nursing him for 30 minutes straight while I took a warm shower!

Pilothouse and The Argonaut Cafe

A few weekends ago, Michael and I went on our babymoon in California’s Gold Country. Check out my pregnancy blog for a full review of the trip and money saving travel tips. We had both been dying for a Gold Country trip for over a year now, so this was the perfect way for us to have some quality time before the baby comes. We ate at two restaurants that really impressed me, so I thought I would share.

We went on our babymoon starting the Saturday of Presidents’ Day weekend, so we decided to save our fancy Valentine’s Day dinner for that night. We both wanted a nice dinner in Old Town Sacramento, so I did some online research and found Pilothouse.

The restaurant is located inside the Delta King Hotel, a retired riverboat docked along the Sacramento River. I made reservations online, but we probably did not need them. We came later in the evening so we missed the rush, and the hostess told me that the day after Valentines Day is never that busy. She suggested that in the future we always make a reservation just in case.

The staff was very friendly, though our specific waiter was kinda slow (Michael’s beer and our bread came about 15 minutes later). The atmosphere was very nice, the whole dinning room restored to it’s 1930’s charm. And the view of the river all lit up at night was lovely.

I ordered the beet salad (Michael just ate the cheese for me). It was sooo good. The beets were perfectly cooked and very juicy.

For my entree, I had to order the only vegan thing on the menu, Grilled Vegetable Tagine. I was a little annoyed at first there was only one choice, but it was tasted good so I have no complaints. Lovely crisp veggies served over rice, seasoned with a sweet but savory spice blend. I am sorry I don’t have a photo of my entree, I know I took one and somehow it vanished off my phone….

Michael ordered the Saturday Night Steak Dinner Special—nothing besides his starter salad was vegan. He always wants steak for Valentines Day. I can’t complain because I didn’t have to cook it for once. He loved his organic and antibiotic free prime rib. And was in heaven with his buttery mashed potatoes. Meh, I will stick to my still delicious healthier food 🙂

This place is expensive, but it was a lovely treat. We got to dress up and snuggle up next to each other. It would have been even better if I could have sampled the wine selection…..

On Monday while visiting the Marshall Gold Discovery Park, we had a lunch at this adorable little cafe across the street from the Visitor’s Center. The Argonaut Cafe is an organic, farm-to-fork style restaurant. It’s a tiny little building, and even at 2:30 PM when we entered, it was pretty busy.

The cafe is decorated like an old Gold Rush era store, mostly wood and metal. There are a lot of picnic tables out back with a great view of the American River.

The menu is basic cafe foods, like soups, sandwiches, salad, and a few desserts. I ordered the Fresh Veggie Sandwich (without the cheese) on Sourdough and Michael got the Organic Smoked Turkey on Sourdough. My sandwich was heavenly. Fresh, crispy veggies with a creamy hummus. And I love buttery California avocados. I was so happy to find fresh organic food in such a small town at reasonable price (both sandwiches were $8 each).  The soup of the day was vegan chili, but I didn’t want to be too full and set off my acid reflux. It looked really good though, maybe next time.

We want to do a bigger Gold Country trip when Jack is old enough and I totally plan on coming to both these restaurants again. Though, Jack might stay the night with his Auntie who lives nearby when we go back to Pilothouse so momma can enjoy some wine in peace.

And see, it’s not that hard to go on a vacation and eat vegan. Just do some research and be prepared that your food will be delicious, just not a mound of buttery mashed potatoes. Or who knows, maybe you will luck out and find an awesome organic cafe!

Chipotle Sofritas

Last week Michael and I stopped by the mall after work to browse for some stuff. I suddenly got that horrible pregnancy hunger—the one like “IF I DON’T EAT NOW I WILL TURN INTO GODZILLA AND DESTROY THIS WHOLE BUILDING!!!” So Michael suggested we eat before continued. I saw Chipotle and thought of how those warm burritos saved my life after hours of studying in college. As we entered, I saw the sign for sofritas! I totally forgot they added a vegan protein option to the menu! I thought I died and went to heaven!

The sofritas are braised organic tofu  marinated in a blend of spices and peppers. It’s was very tender and very flavorful. It had a bit of a kick, but was not overly hot. I wouldn’t say it tasted exactly like meat (a meat eater would probably be able to tell the difference), but the texture was pretty close.
While I love Chipotle, they can be very high in calories. Even if you make it all vegan. Let’s compare the burrito I used to order in college:

Do you see that? 1505 calories in a burrito and side of chips & salsa. With no meat or dairy! It’s all the carbs and fat. Proof you can still be vegan and eat unhealthy. Let’s make some reasonable variations, like adding the new sofritas and cutting out the chips & salsa:

Just buy cutting out the chips& salsa, you save 590 calories alone. The carbs drop from 215 to 147, and the total fat from 60 to 43. Getting better, but let’s look at what I ordered last week:
A total of 660 calories, way more reasonable. I switched to tacos instead, which saves about 50 calories from the tortilla. I also cut out the rice. Yes, you can get brown rice for added nutrition, but that is still a lot of carbs for one meal, so skip it. I also cut out the guacamole. It is a healthy fat, but it’s high in calories and still is a fat. I add it as treat every one and awhile, but not every time. I also always pick black beans over pinto beans because they have less sodium and more fiber. But load it up with all the salsas you want! They are lower in calories and you get more veggies in for the day.
If you are really cutting calories try this:
A salad with sofritas, only 440 calories. More nutrition from the added lettuce. The black beans still provide some carbs to make it a balanced meal. No dressing (215 calories), but all the salsas will provide enough liquid/flavor to take it’s place at a less than half the calories.
I really suggest trying the sofritas next time, they are really delicious. Just make wise decisions on what you add to your meal. Even healthy and organic food in the wrong amounts can become unhealthy. And if you are pregnant like me, make sure you get enough protein (likes sofritas) with every meal to keep you full so you don’t end up wanting calorie-packed extras like chips. No one want to be losing a ton of baby weight because you didn’t balance meals properly.

I really suggest checking to see if you favorite chain restaurants have this feature before you go. You can see what vegan options they have or how you can make things vegans. You can also figure out how to get what you really want, without going overboard.

Vegas Wedding and Dinner at Scarpetta

So,  we got married in Las Vegas!

I chose the Las Vegas Wedding because I liked their packages and options. I wanted something easy, quick, and simple. I wanted our love to be focus the ceremony. I honestly have no complaints with this chapel at all. I would like to warn this is quick, in-and-out, no frills place. If you want the long, elaborate, personalized ceremony then this place is not for you. Our ceremony was still beautiful and we got great customer service nonetheless.

Afterwards my dad took amazing photos of us on the strip.

It was SO much fun! Everyone was saying congrats and giving us high fives.

Then we had dinner at Scarpetta in the Cosmopolitan. We had a table with an amazing view of the Bellagio fountains.  The service and the food were AMAZING!

To start, I got the Heirloom Tomato Salad. Fresh heirloom tomatoes, olives, marinated eggplant and good olive oil. Michael just ate the cheese for me. Then I had the Spaghetti, which was seriously the best pasta I have ever had. Homemade pasta with simple red sauce with tons of fresh basil.

Then for dessert Michael and I shared Amedei Chocolate Cake (it was not vegan, but like I have said before, you have to be reasonable sometimes). Not only was it so delicious I cannot even think of a word to describe it, they wrote “Congratulations” on our plate!

I seriously recommend this place to everybody. We are going to come back  to Vegas for our anniversary next year, and I already know I want to eat here again. Check out the rest of the menu here.

Thank you Mom and Dad for making your princess feel like a real princess! And thank you Michael for being such an amazing man, I am so happy to spend the rest of my life with you.

In and Out Veggie Burger

A few months ago a deal came up on Groupon for the Pitbull and Ke$sha concert in Mountain View. I do not really know why, but I LOVE Ke$ha’s music. I find her as a person a bit annoying though. I guess I like her “be yourself, even if you are a freak” musical message. Must be the Oregonian in me. And, how can anyone not love Pitbull? My mom even things he is sexy. I asked Michael to go with me—more as a courtesy though, he knew he was going no matter what. We had a really fun night. We drank some beers, laughed at the 14-year-old’s dressed like hookers, sang, and danced together.

After dancing to Mr. Worldwide for 2 hours, we were starving. And as a Californian now, that usually means In and Out. I normally get a tray of fries and just watch everyone happily eat their burgers. Now, I do not really crave meat ever, but I do love burgers (veggies ones now that is). I had read an article awhile about that In and Out toyed with the idea of doing a veggie patty burger, but, they do not want to deviate too much from the original menu. So, I assumed I would always munch fries in jealousy.

But I was wrong. I knew In and Out had a secret menu. Michael introduced it to me when I was visiting here and he ordered Animal Fries. However, last week we watched an episode of California’s Gold about In and Out, and someone ordered a Veggie Burger. I instantly searched the internet to find if it was true. And it is true….but not quite.

An In and Out Veggie Burger is simply the hamburger with no meat. Just the bun, lettuce, tomato, sauce, and onion or cheese if you want it. Simply order it with no sauce, ketchup/ mustard instead, and no cheese to make it vegan.

Now, I know what you are thinking, “A bun with veggies on it? Seriously? I can make that at home, what’s the point!” I thought the same thing. But Michael really wanted In and Out after the concert, so I thought I would give it a try. IT WAS AMAZING. The spongy bun, the crisp lettuce, the juicy tomato, the slightly tangy onion, and just the right amount of condiments…I want another one right now, it is that good.

Besides wanting to share the delicious discovery, the reason I posted this to show that you can be vegan and eat at normal restaurants. You can live a normal life and not be alienated by your lifestyle choice.

Seriously, try one next time you at In and Out. SO GOOD! It’s like heaven on a bun.

Organic Roasted Beet and Carrot Salad with Lemon Quinoa

I decided that Michael and I need to eat more organic vegetables. I wish we could afford to buy all organic, especially from a farmers’ market so we could support the local agriculture. Unfortunately, for a young couple just starting out, that is out of our budget. Then I randomly thought of farm delivery service. Most of them allow you to select a package within your price range and it comes right to your door. So I simply Googled “organic produce delivery Bay Area” and a bunch came up. I decided to go with Farm Fresh to You. I like how professional the website is (I hate when business have website’s that look like 1995) and thought the farm’s story was nice. I also thought the prices were reasonable and I liked that you could chose the frequency of delivery. And you can customize your deliveries by adding produce to your exclude list. For  example, I am not a fan of peaches, so I added peaches to my exclusion list. Now I will open the box and go “Ick, peaches!”

I selected the Veggies Only box every other week. Friday morning when I stepped out the door to go work, there was the box. When I came home from work I checked out all the lovely produce. Sweet peppers, tomatoes, zucchini, avocados, eggplant, nectarines (I modified my order because I did not want something), baby beets, and carrots. It all looked good, but the minute I saw the beets and carrots, I thought only one thing: roasted salad. I LOVE roasted beets. So good and so easy to make. And, roasted carrots are so sweet. Nothing not to love.

Now I would just eat the salad for dinner, but Michael would not be happy. “I know all you eat is vegetables, but I need more food!” Our lemon tree had a brunch of ripe lemons, so made him lemon chicken. Since I had so many, I thought I would make lemon quinoa as well.

Another side note, I also decided Michael and I are going to eat only healthy fats. So only olive oil and coconut oil from now on. Obviously Michael still eats meat so he has animal fat too. That is his life choice and I respect that.

Roasted Beet and Carrot Salad:
4 beets (I had one large and 3 medium)
1 bunch of carrots (I had Nantes specifically)
1 tbs olive oil, divided
Salt and Pepper
1 tsp Italian seasoning
1 squirt of fresh lemon juice

Pre-heat the oven to 450 degrees. Alternately, you can do this on the grill. But you REALLY need to watch them and turn them regularly. They tend to go from uncooked to burned-beyond-all-recognition in an instant.

Cut the tops and bottoms off the beets. Wash well. Cut a small silt in the top of the each beet. Place each beet in it’s own piece of foil. Sprinkle each with salt and pepper.Wrap each beet up with the foil so it is covered completely. *Side note: I do not put olive oil on them before roasting. You are going to be peeling the skin off later, so I feel it is just a waste and add excess calories.

Cut the greens off the top and the root strings off the bottom of the carrots. Wash well. Cut into 1/4 of inch sized pieces. In a small pan or baking sheet, toss together will 1/2 tbs of olive oil. Then season with salt and pepper. *I do add olive oil to the carrots for roasting since they will not be peeled and loosing the flavor.

Place beets in the oven right-side-up. Cook for 30-40 minutes. They will be ready when a knife can be inserted in the middle with no resistance.

When the beets have 20 minutes left, add the carrots to the oven. When the timer goes the carrots should be   golden (it is okay if they are a little black) and soften,  and the beets will black on the outside but soft on the inside.

Set both the beets and the carrots aside to cool. This salad is served chilled or room temperature.

Once the beets are completely cooled (unless you like burning your hands on hot beet juice), take a spoon or a peeler (or your hands if you do not mind pink fingers) and peel off the charred skin.

Cut the beets into bite-sized cubes.

In a small serving bowl, add the beets, carrots, remaining olive oil, Italian seasoning, and a squirt of lemon juice. Mix together well. Season with salt and pepper as needed.

Lemon Quinoa:
1 cup quinoa
2 cups water
Pinch of salt
1/4 cup fresh lemon juice
1/2 tbs olive oil
2 tsp Italian Seasoning
Salt and pepper

In a small pot, add the quinoa, water and a pinch of salt. Bring to a boil.

Reduce to simmer and cook for 10 minutes.

Remove from the heat and let sit covered for 5 minutes.

Then add the remaining ingredients and mix well.

I let mine cool for a bit, that way the flavors could set in more. Plus, it was hot and I did not want to eat a lot of hot food.

A lovely summer dinner. The beets and carrots were so good. Organic really does make all the difference. I really encourage everyone to not only eat more vegetables, but eat organic ones. Good for you, supports the local economy, and support sustainable agriculture. Another cool thing about Farm Fresh to You, you can adjust your delivery dates. We are going to a wedding in Tahoe in two weeks, when the next box delivery will come. I do not want my veggies to spoil, so I adjusted the delivery to this week instead. Cook! Product Reviews

I mentioned in my post about FoodBuzz Blogger Festival that I really enjoyed the products from Cook! at at the Taste Pavilion. I reached out about working with them and they sent me some samples.

Before I jump into the products, let me tell you a little more about the company. It was founded my Nona Lim in San Francisco, who was inspired to create convenient and healthy food from cooking Singaporean food with her father as a child. She began consulting with physicians and testing allergy-free recipes with the goal of producing clean and nutritious meals. This means no dairy, no gluten, no preservatives, no transfats, and no high fructose corn syrup. Only ingredients from local organic and sustainable farms.

Then in 2011 Nona started the Cook! Delicous Detox program. Cook! provided its clean and healthy pre-made meals to a few test clients for a week and the clients began to see health improvements right away.

Today Cook! offers various meal programs and retail products. The three meal plans are Detox, Maintain, and Customize. You can select the program that is best for you and your health goals. You can find their packaged retail products in stores around the Bay Area.  The meal plans can be shipped nationwide, but the retail products can only be shipped to the Bay Area at this time.

I am not now, nor have I even been on, the detox meal program, but I think it is a fantastic idea. I think delivery meal programs are a good idea for people who either do not know how cook or do not have the time. But most of them are full of chemicals and poor quality food, which seems counteractive. This program, however, actually provides healthy food.  I also like the detox aspect of it. You need to get all the bad stuff out of your body so the good stuff can get in and start healing you.

Now for the samples Cook! sent me. They arrived at my door step the next day, still frozen. This really impressed me, I have heard of other meal services arriving a week or more later. They come in individual packages that contain 1.5 servings each. You just pour out the contents and heat over the stove.

Thai Green Curry: I tried this one at the Taste Pavilion and it was so good I wanted to try it again. It a little creamy and very flavorful. It has a nice selection of veggies that are cooked perfectly.  I had this over rice for dinner one night after a long day and it totally hit the spot.

Tomato Soup: I have always thought that the “classic” canned tomato soup tasted nothing like tomatoes. But this soup was like biting into a sweet, vine-ripend tomato! It is perfectly seasoned too.  What I liked most is that it is not totally pureed. It still had a bit of texture, proving that it was made from fresh tomatoes. I went nicely with a piece of sourdough for lunch after a brisk bike ride.

Asian Lemongrass: I hate to say it, but I was not a fan of this soup. I love lemongrass, but I could not taste the it at all. It was actually kind of bland. However, the veggies and noodles were cooked perfectly. And I liked the big chunks of tofu. I think this has the potential to be a great veggie soup, just need some tweaking.

Thank you so much Cook!, I think this a terrific company with a mantra that the whole food industry should adopt! I hope we can work together again in the future.
